Wait, Christmas is over already? Hmmph.
So, like, is it New Yearās yet? And can we still hang out and have parties all week? And whereās the Chili Cheese Black Bean Dip?
But first, you know youāre a food blogger when your computer desktop looks like this:

This is a shameful moment for me. Not the fact that my desktop is covered with variations of dip1, dip2, and dip3 files swimming in between veggie lasagna and pretzel bites.
Cause I actually kind of like that, in a weird unorganized bloggy way.
Whatās shameful is that this dip rightfully belongs in the mini-crockpot.

The real reason there is no mini-crockpot making an appearance in these photos is because I was too lazy to wash dishes. Again.
Also, mini-crockpots have high potential for awkward food photos. You know the type. Awkward family photos, awkward pet photos, etc. etc. That reminds me: have you seen Sketchy Santas? You need to. Like, yesterday.
But back to the Mini. Thereās just something about a mini-appliance that plugs in and keeps your Chili Cheese Black Bean dip perfectly warm and melty that you canāt not love. It almost kinda makes you want to jump right in and stay a while. Orrrr for the rest of your life.

PS. I used my regular slow cooker for this recipe which is a Crock-Pot that Iāve had for the last five years. SO MUCH FOOD has come out of that thing over the life of this blog which is pretty impressive for a $28 kitchen appliance.
Chili Cheese Black Bean Dip
- Total Time: 10 minutes
- Yield: 24 1x
Description
This chili cheese black bean dip is always a hit! Made in a mini-crockpot and served with tortilla chips. Party food with just 5 ingredients!
Ingredients
- 3 cups prepared chili, or 2 cans
- 1 block cream cheese (I used light)
- 3 oz. Velveeta cheese
- 1 can black beans
- chili powder, cumin, or cayenne to taste
- cilantro for topping
- tortilla chips for dipping
Instructions
- In microwaveable safe bowl, melt first 3 ingredients. Stir well until blended together. Add black beans and seasoning, if desired.
- Transfer to a mini-crockpot for serving. Serve with cilantro and chips!
Notes
I didnāt need to season mine at all ā it just depends on the type of chili youāre using and what tastes good to you.

I donāt keep my images on my desktop like thatā¦theyāre in Lightroom and then into a Blogging Pics folder but suffice to say, the folder has thousands of images in it.

Itās overwhelming, isnāt it?! I actually have all my photos stored elsewhere on my computer, but just the most recent ones I keep on my desktop for easy access. Iām starting to have to get really specific with naming each folder because there are so many of each type of food! š

Love those two little corn chips dancing cheek to cheek. I think it is the week of dips ā for parties, lunch, dinner. Maybe I can throw this one on some eggs and call it an omlette ā therefore welcoming dips to breakfast. Iām a big fan of chili and cheese ā together or alone ā throw in the dancing corn chips, and that recipe is getting sucked right onto MY desktop!

How much, approximately, is 3 oz. of cheese? This sounds wonderful! I love the idea of making an omlette with it!
On the Velveeta foil, there are marks for each ounce. Thatās how I figured it out. Itās probably roughly about 1/2 cup. But really, you could do as much or as little as you wanted!
Taking a glimpse at the photos that say cin1, cin2 and cin3 (for cinnamon, as in cinnamon stars haha) on my desktop, I know exactly what you mean. While I usually manage to organise them all in seperate subfolders, I have reached a new kind of lazy over the last week by simply saving the photos among the originals on the sd card. Shame on me.
